2 lavash wraps or 6 small tortillas (I used Joseph’s Lavash)
12 oz store-bought rotisserie chicken breast (about both breasts), shredded
1/4 cup of your favorite BBQ sauce
1/2 bag of cabbage slaw mix (about 7 oz) - this might also be labeled as "coleslaw mix"
1/3 cup Bolthouse Farms ranch or 5 tablespoons Greek yogurt mixed with ranch seasoning
1/2 cup reduced-fat shredded cheese (cheddar cheese or pepper jack would be great!)
A few pickles, chopped
Salt and pepper, to taste
Instructions
Prep and Season the Chicken: In a large bowl, toss the shredded chicken (or leftover chicken) with the barbecue sauce. Mix to coat the chicken.
Make the Slaw: Add the cabbage slaw mix and ranch dressing (or Greek yogurt mixed with ranch seasoning) to a medium bowl. Season with salt and black pepper and toss to combine.
Build Your Wrap: Gently warm the lavash or tortillas in a dry skillet over medium-high heat, then lay it on a cutting board and spoon about 6 oz of the chicken mixture onto the center of the wrap.
Add the Toppings: Spoon slaw over the chicken, then top with about ¼ cup of shredded cheese and some chopped pickle.
