I know we've all been there: rushing out the door in the mornings, barely having time to grab a coffee, let alone a decent breakfast. There are also those of us who don’t even bother to have coffee or breakfast at home, and instead head to their nearest Starbucks to grab coffee and a breakfast wrap or some egg white bites. If you’re trying to be more health conscious, Starbucks’ egg white bites are usually the top choice. But I have a bone to pick with them. First off, they can get expensive. Second, their protein to calorie ratio could be a LOT better, and third, you only get two and they are SO SMALL! Don’t get me wrong, these are much better options than your traditional Bacon, Egg and Cheese sandwich, but still, we can do better. Enter my COPYCAT Starbucks egg white bites, packed with flavor, super high in protein, and lower in calories compared to the traditional version! 

Why This Recipe is the Best

This recipe is a winner for a few reasons. First, it's incredibly easy to make, requiring minimal prep and just a handful of ingredients. Second, it's packed with protein! Two Starbucks egg white bites are approximately 170 calories with 10g of protein!Two of my egg white bites are only 60 calories with 10g of protein, which means you can have FIVE for the same calories as TWO Starbucks Egg white Bites! And TRIPLE THE PROTEIN! Talk about getting more bang for your buck (and your body's needs!). Finally, this recipe is endlessly customizable. Feel free to swap out the veggies and spices to create your own flavor combinations.

What You'll Need

The beauty of this recipe is that it uses simple ingredients you probably already have on hand. Here's your shopping list:

  • Egg whites

  • Cottage Cheese (full-fat or low-fat, your choice!)

  • Mozzarella Cheese (shredded)

  • Turkey Bacon

  • Salt and Pepper

  • Olive Oil

  • Veggies! I use spinach and roasted red peppers.

Special Equipment (Not Really)

This recipe doesn't require any fancy equipment. You can use a simple muffin tin if that’s all you have, but I highly recommend using silicone molds! I used THESE. They're pretty inexpensive and available online or at most kitchen stores. For an even more hands-off approach, you can explore using a sous vide machine and try the sous vide egg bites method, but it's definitely not essential for this recipe.

Making the Egg Base

First, we'll make the base of our egg bites. I like to blend all my ingredients (except the spinach, peppers, and turkey bacon) in a blender or food processor. This will help break down the cottage cheese and create a smoother texture.

Adding the Goodies

  • Water Bath Method (My Method): This method creates a steamy environment that helps the egg bites cook evenly and develop a nice, custardy texture. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Fill a large sheet pan with about an inch of water. Place your muffin tin (or silicone mold) on top of the sheet pan. Pour your egg mixture into the cups and bake for 25-30 minutes, or until egg bites are set and tops are golden.

  • Muffin Tin Method: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a nonstick muffin tin with olive oil or cooking spray. Pour your egg mixture into the muffin cups, filling them about ¾ full. Bake for 20-25 minutes, or until the egg bites are set and cooked through.

  • Sous Vide Method: While not essential, for those curious about the sous vide method, you can use a sous vide cooker to cook your egg bites. Simply preheat your water bath to the desired temperature (typically around 170°F  [77°C]). Pour your egg mixture into silicone egg cups or a sous vide safe container and submerge them in the water bath. Cook for about 45 minutes to 1 hour, or until the egg bites are set.

Once your egg bites are cooked, let them cool slightly in the pan before transferring them to a wire rack to cool completely. They can be stored in an airtight container in the refrigerator for up to 5 days. Pro Tip: These egg bites are perfect for meal prep! Copycat Starbucks Egg Bites Recipe

These are a healthy, high-protein, and economical alternative to the famous Starbucks Egg White Bites!

Ingredients

  • 3 cups or 1.5 boxes of liquid egg whites
  • 1.5 cups low-fat or fat-free cottage cheese
  • 1 cup lite shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
Toppings
  • 2 cups fresh spinach
  • 1 cup roasted red peppers
  • 3 strips turkey bacon

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Combine egg whites, cottage cheese, mozzarella cheese, garlic, onion, salt, and pepper into a blender or food processor and blend until milky.
  3. Throw all of your toppings into a pile and chop them into fine pieces.
  4. Fill a large sheet tray with an inch of water.
  5. Place two silicone muffin tins on the sheet tray with water and give each muffin mold a spray of avocado oil.
  6. Add the liquid mixture into each mold, filling about halfway. Start smaller to make sure you have enough mixture to fill all the molds.
  7. Sprinkle a little bit of chopped toppings into each mold. Some toppings will sink into the mixture and that’s totally fine!
  8. Place the molds on the sheet tray filled with water into the oven and bake for 30 min or until the top is golden!
  9. Let them cool for about 10 minutes before removing them. Be careful, as they are very soft and airy and can break apart if you try to remove them too quickly.
  10. ENJOY! Leftover egg white bites should be popped into an airtight container and stored in the fridge. They’ll keep for about 4 days.
