Ingredients

Base:

  • 1/2 cup fat-free plain Greek yogurt

  • 1/2 cup fat-free vanilla yogurt (like Siggi’s)

  • 2 scoops vanilla, eggnog, or gingerbread flavored protein powder

Toppings:

  • 1-2 tablespoons chocolate chips, melted with 1 teaspoon coconut oil

  • 1/2 cup pomegranate seeds (for extra crunch)

  • Christmas sprinkles (for a great pop of color!)

  • Crushed candy cane

  • Crushed gingersnap cookies

Instructions

  1. Mix the yogurt base: In a medium bowl, mix the Greek yogurt, vanilla yogurt, and protein powder. Stir well until combined.

  2. Spread the mixture: Pour the yogurt mixture onto a parchment paper-lined sheet pan. Use a butter knife or small offset spatula to spread the yogurt into a thin layer, about ¼-inch thick.

  3. Add the chocolate: Drizzle the melted chocolate over the top of the yogurt layer. Remember that the yogurt layer isn’t set yet, so it might be hard to spread once you drizzle!

  4. Add your favorite toppings: Sprinkle the toppings of your choice all over the top of the yogurt bark. Add as much or as little of each topping as you’d like.

  5. Freeze the bark, then break into pieces: Place the baking sheet with the finished yogurt bark into the freezer and let it freeze for at least 2-3 hours or until the yogurt is set. When it’s done, cut this tasty treat into pieces with a sharp knife and store in a freezer-safe container in the freezer to enjoy all season long.

  • Storage: Keep the bark in an airtight container in the freezer to prevent melting.

FAQs

  • Yes! If you use plant-based protein powder, coconut yogurt (or other dairy-free yogurts), and dairy-free chocolate chips, you’ll end up with a vegan version of this recipe.

  • Of course! Stevia, monk fruit, maple syrup, or a little honey are all great options to help sweeten this healthy dessert. You could even add a splash of vanilla extract or peppermint extract for even more flavor without added sugar.

  • Once the bark is done, make sure you store it in an airtight container in the freezer so that it won’t melt. Separate the layers of bark with parchment paper if you’d like for extra non-stick protection.
