1/2 container of So Delicious CocoWhip (light version recommended for fewer calories)
2 scoops vanilla protein powder (I used Clean Simple Eats, code: PROTEINSNACKQUEEN for 10% off)
1-2 tsp mint extract (adjust based on preference)
1-2 tsp green food coloring
Instructions
Line a 9x9 baking sheet with parchment paper, clipping the edges so it stays in place.
Lay the graham crackers flat on the baking sheet, covering as much space as possible. This will take approximately 5.5 sheets.
In a medium bowl, mix the CocoWhip, protein powder, mint extract, and food coloring until smooth and well combined.
Pour the mixture over the graham crackers and spread evenly with a spatula.
Place the remaining 5.5 sheets of graham crackers on top, aligning them with the ones below. Press them down gently to ensure the mixture spreads to the edges.
Transfer the tray to the freezer and let it sit for at least one hour, or until the mixture is firm.
Once frozen, lift the block of ice cream sandwiches out using the parchment paper and place it on a cutting board.
