  • 4 large eggs

  • 1.5 cups almond flour

  • 1/2 cup all-purpose flour – Gluten-free works great, too!

  • 1 cup light shredded cheese of choice – Dairy-free cheese works here if needed.

  • 2 tablespoon maple syrup

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt (or to taste)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika

  • Fresh parsley for garnish

  • Avocado oil for cooking

Instructions

  1. Preheat the Oven and Prep your Pans: Turn on the oven and preheat it to 400 degrees F. Line 2 sheet pans with parchment paper and set them aside.

  2. Brown the Chicken Sausage: Heat a bit of avocado oil in a large skillet over medium-high heat. Add the chicken sausage or ground turkey to the pan. Season with the maple syrup, salt, black pepper, garlic powder, and paprika.

  3. Sauté the Holiday Hash: When the meat is about halfway cooked, add the holiday hash to the pan and sauté, stirring occasionally, for about 5-10 minutes or until most of the liquid in the pan evaporates. Transfer to a bowl or remove the pan from the heat and let it cool.

  4. Start Combining the Fritter Ingredients: In a large mixing bowl, combine the almond flour, all-purpose flour, cheese, and eggs. Stir well to mix.

  5. Add the Holiday Hash Mixture: When the Holiday Hash mixture has cooled down a bit, add it to the large mixing bowl with the rest of the ingredients and stir to combine.
