One-Pan, High-Protein, Low-Carb Lox Breakfast Skillet

Ingredients You’ll Need:
1 small onion, chopped
2 Laughing Cow cheese wedges (Garlic & Herb)
100g egg whites
1 whole egg
1 package of Everything But the Bagel Smoked Salmon (from Trader Joe’s) or plain smoked salmon
Everything But the Bagel seasoning
Fresh dill for garnish
How to Make It:
Heat a non-stick skillet over medium heat and spray with a little cooking spray (or use a tiny bit of olive oil if you prefer).
Add the chopped onion to the skillet and sauté until it softens and becomes translucent, about 3-4 minutes.
In a bowl, whisk together 100g egg whites and 1 whole egg.
Pour the eggs into the skillet with the onions and cook, stirring gently, until the eggs are just set.
Add the Laughing Cow cheese wedges to the skillet. Stir until the cheese melts into the eggs, making them creamy and flavorful.
Tear the smoked salmon into pieces and gently fold it into the skillet.
