  • 1 package (about 3 cups) cubed butternut squash

  • 16 oz (1 lb) Brussels sprouts, halved or cut into thirds

  • ½–1 whole red onion, thinly sliced

  • 1 package chicken sausage (like Trader Joe’s Italian Sausage) - you could also use chicken breast in this recipe if you'd prefer

  • 1 large sweet potato, cubed (optional)

  • 2 tablespoons olive oil

  • 5 strips turkey bacon

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon paprika

  • Salt and black pepper to taste

For the Maple Dijon Yogurt Dressing:

  • ½ cup Greek yogurt

  • 1½ tablespoons maple syrup

  • 1 tablespoon apple cider vinegar

  • ½ teaspoon Dijon mustard

  • Pinch of salt and black pepper

  • Dash of paprika

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Prep and season the veggies: If needed, finish dicing and slicing the vegetables. Then, spread them in a single layer on one sheet pan. Drizzle olive oil over the top and toss the veggies to coat them evenly. Sprinkle the garlic powder, onion powder, paprika, salt, and pepper over the veggies. Toss again to coat evenly with seasonings.

  3. Arrange the sausage on the pan: Slice the sausage and add it to the sheet pan with the vegetables.

  4. Add the turkey bacon to a pan: Lay the strips of turkey bacon on a second baking sheet.

  5. Roast: Place both sheet pans into the oven. Cook the bacon for about 15 minutes. Keep an eye on it and remove the pan from the oven once it’s crispy. Keep roasting the sausage and vegetables for an additional 15 minutes (for a total of about 30 minutes), until the sausage is warmed through and caramelized (or cooked, if it’s not pre-cooked) and the veggies have golden, caramelized edges.

  6. Mix the dressing: While everything is roasting in the oven, mix the Greek yogurt, maple syrup, apple cider vinegar, Dijon mustard, salt, pepper, and paprika in a small bowl. Stir until smooth and well combined.

  7. Finish the bacon: Once the bacon is cool to the touch, give it a rough chop and sprinkle it over the sausage and veggies.

  8. Garnish and serve: Drizzle maple dijon yogurt sauce over the top of the sausage, bacon, and veggies, sprinkle with chopped flat-leaf parsley, thyme, or cilantro, and serve. Enjoy!
